Time for cake - Coconut loaf cake recipie
175gsoft butter
175gcaster sugar
3med eggs
1 teaspoonbaking powder
225gplain flour
100gsweet coconut
2 tablespoonsmilk
Prep: 10 mins
| Cook: 1 hour
| Extra time: 20 mins, cooling (which i didn't follow and burnt my tongue)
1.
Grease and line 2lb loaf tin, i coated it in butter than added coconut so it stuck to he butter.
Preheat oven to gas
2.
Beat with a wooden spoon or electric whisk, the butter until soft.
Add the caster sugar and cream until light and fluffy.
Whisk or beat in 1 egg at a time.
Sieve in the flour, baking powder, mix well together.
add the coconut and milk mix together.
pour into the loaf, sprinkle with more coconut and bake for 1 hr
3.
If the top is browning to much and the cake is not cooked through cover with tin foil.
Now if this naughty pug will leave me alone, please excuse me while i enjoy my well earned tea and cake break!
