I have been itching to bake all week. In particulary a Victoria Sponge. I got the below recipie from Lady Cherry Loves blog.
Victoria Sponge
Ingredients
170g unsalted butter
170g golden caster sugar
3 large eggs
170g self raising flour
1 teaspoon baking powder
2 tablespoons milk
1 teaspoon vanilla extract
strawberries or strawberry/raspberry jam
150ml double cream
icing sugar to decorate
Method
Preheat the oven to 170C or gas mark 3 and line two 20cm cake tins.
Whip the butter and the sugar until the become pale and fluffy.
Whisk in the eggs one by one.
Sift in the flour and baking powder, and fold it in to the wet mixture. If it becomes too stiff, use the milk to loosen it.
Add the vanilla extract.
Split between the two tins, and bake for 25 minutes.
