I am a massive fan of Wagamamas vegetable and noodle soup., Saien Soba. Its light, healthy and filling. I make my own at home. Using the ever so glamorous Asda smart price, 9p noodles.
Ingredients
One packet of supermarket value 'super noodels'
One clove of garlic
One small chili
One cm cube of ginger
One red onion
Half a carrot
Half a courgette
Four leafs of Chinese lead or pak choi
Hand full of bean sprouts
Half a pepper
Quarter Aubergine
Hand full of peas
Small bunch of fresh coriander
One spring onion
Three radishes
Two teaspoons of bouillon
Splash of soy sauce
Splash of sesame oil
Chop up the garlic, chili, onion, lightly fry in a dab of oil.
Add the 9p noodles and about two cups of boiling water, add the Chinese leaf, stalks of coriander and bean sprouts. Boil for two minutes.
Pour into a big bowl, drizzle with soy sauce and sesame oil to taste.
Enjoy, but look out it will be hot!
